Having a pop-up coffee trolley, or mobile ready, commercial grade machine is always a great addition to your corporate event, private party or even sporting event. Whether you are planning a small intimate restaurant style event, or even creating experiences for your clientele in your office, finding the right machine equipment, along with qualified and passionate baristas is important. Specialty coffee in Melbourne and across Australia has undoubtedly grown in recent years, with many leading Australian brands opening their premium specialty coffee arm. Along with good roasted product, finding the right staff to operate mobile coffee carts is crucial, we look at some broad tips you can share with your staff for training and development.

To celebrate the launch of our Melbourne coffee cart, we look at what roasting procedures and conditions need to be adhered to, to be called specialty coffee in Melbourne. The origins of specialty coffee dates to 1974 where coffee expert Edna Knutsen published content in the Tea and Coffee Journal. Knutsen refers to the coffee beans full of flavour and the process, along with the types of micro climates the coffee bean is grown in. A ranking system of 80 points out of 100 is sufficient to call the coffee bean specialty coffee.

The Barista

The profession of being a barista has evolved, and the standard has lifted in the industry. With competitions offering rewards for making the perfect latte, or espresso are now in full swing right across Australia. Barista and staff hire has changed how we look at how we run our café. The range of skills and service a barista offers, has narrowed into a more competitive industry. Guests at pop-up carts can now find a high standard in many forms such as a hot latte, cocoa or hot chocolates as a mocha, or even espresso. With so many variables such as staff, machine, the water used and even water pressure of the machine, the grinder and coffee beans. These variables can affect the taste and ultimately the experience of the customer.

The Plant

Beans are often labelled Arabica or Robusta, they are grown all across the world and in fact there are 160 types plants. This can determine the range of the score the coffee bean is awarded. Beans are now grown and sourced across the world sustainably, with many countries across Central America relying solely on it’s production off coffee beans.

With the warm climate and environment in Central America, this affects the flavour and quality due to water, temperature, and at higher altitudes, it slows down the rate of the growth of the coffee plant.

The coffee is harvested usually between November to February, by coffee pickers who often live on the farm with their families, from the start of harvest through to the season ending.

Altitude and Climate

Climates change from each continent, and so does the growing conditions. The coffee bean flavours can change due to moisture levels, sunlight, rain, and other elements that could play a role such as method of farming.

Altitudes and climate and the environment affect the different sorts of tastes that we experience at our coffee carts, so selecting the right bean is important. The altitude can easily manipulate flavour by affecting how fast or slow the plant grows. As an example, the rate of the plant growing could be as a result of better drainage there for the plant doesn’t receive as much rain.
